I would like to introduce myself, I am Paul Abbess the resident Head Chef at the Axe and Compasses where I lead a team of 2 Chefs and 4 supporting Chefs and have been for 9 years. In this time I have had the pleasure to put all my passion and experience to the fore. My career began nearly 30 years ago where I worked my way through Westminster Collage while working at the 'Four Season's Restaurant ' at The Inn on the Park Hotel, Park lane which has 5 Stars and a 2 Rosette Restaurant. I then travelled around France to enhance my culinary skills and experience the French flair for fresh ingredients. I travelled for a year working mainly in the South of France. Upon my return to the England I travelled the country working in various 4 Star Hotels and Restaurants gaining as much experiecne as possible. I returned to London where I took place at the Kennington Institute Guildhall and a number of other Private clubs including a year with Marco Pierre White where I had the pleasure to cook for members of the Royal Family and Prime Minsters. I then joined the Salisbury Hotel, Hertford and finally settled at the Axe and Compasses. I hope you enjoy my take on food. It is simple food cooked with the best local ingredients and presented with an experienced flair.
