Upon taking ownership of the Axe and Compasses (in 2000), we implanted our philosphy of purchasing ingredients from local producers and prepaing meals and menus which take the customers dietary needs into account, ie.: diabetes, blood pressure and food allergies etc.
Our trained chefs prepare all our dishes (starters, mains and desserts) on the premises using only the highest quality ingredients. Each day we secure fresh fish, meat, bread, dairy products and produce. We bake fresh white and wholemeal bread daily; make butter and ice cream weekly. Our chips are hand cut and served with the skin. Furthermore, we customise the menu each month to reflect the availability of seasonal locally sourced produce in order to offer traditional fare alongside innovative and creative dishes. This imparts better qualit y and price that is offered to the customer. Our efforts have been reconized and we have been awarded the 5 stars rating from our local Environment Health Office.
We are commited to constant improvement and persistently seek to find and add local suppliers. Our enviable location in the Hertfordshire countryside encourages us to take advantage of the freshest produce possible and regularly create new dishes so we can continue to offer you, our guest, an exceptional dining experience.
Our uniformed staff can offer additional information about our dishes. We can offer a very good selection of wines and award beers to complement your meal. We are also very proud of our 'Beautiful Beer Award.
The premises date to the 16th century and are set in the beautiful Roman village of Braughing. The area is rich in natural beauty and history and is a favorite of ramblers and cyclists. We offer an elevated beer garden with a small, informal outside bar. Our beer garden overlooks the local cricket grond.
In summary, we offer a high-quality, customer-focused, catering service based on locally sourced ingredients and freshly prepared meals and work collaboratively with our customers to assure their needs are met.
